from my Sable with a new CD Player, i just can't find out how to take

Do you mean how do you remove the old stereo? Ford & Mercury (and I assume Lincoln too) have two small holes on either side of the stereo face. What you need is either two bent wire hangers, or a simple set of tools from any auto parts store. I forget the name, but something like Ford Stereo Puller (works also for a/c panel) and runs about $5. They look like two large metal U's. You insert in the holes and push outward (left on the left side, right on the right side) and pull out. The last couple of times I did it, it was a pain in the butt. The theory is that they release the clips inside that hold the stereo to the console, but they don't always work so well in practice.

For the wiring harness to connect the new stereo to the adapter inside the console, you can buy it new with the wiring diagram from any auto parts store, Best Buy (or similar that sells stereos), or just go to a shop that does installations, they might have a used one lying around for cheaper. New the wiring harnesses run about $10-15 or so, I paid $5 for my most recent one used at a stereo installer/custom mod shop. The wires tend to be pretty obvious, or bear only a little examination to figure out which is which if you didn't get a wiring diagram with the harness.
