Could somebody tell me if I can change the air/fuel mixture on my '97 24V 3.0L Sable. At idle all you can smell is gas from the tail pipes.

It's supposed to be plugged from the factory. Try cleaning your mass air meter, changing your fuel filter, and cleaning your idle air controll valve.
